A little green..

The High Holiday was kinda anticlimactic this year. We are doing the family observance on Saturday, so the Hubs and I had a quiet dinner of lamb burgers and refried potatoes. I also made this awesome avocado dressing to go with my “green” salad.

Butter lettuce blend, thinny, thin, thin sliced and seeded jalapeños, diced and peeled cucumber. Just three green things. Then I halved and smashed a perfectly ripe avocado. 

Add a heaping tablespoon of mayo and quarter cup of buttermilk.

Then I added a little parsley and whazzed it up with my stick blender. Came out pretty sturdy. Next time I think I’ll add a little lime or lemon juice, to help thin it a little.  I tossed it with the assorted green items I had and got a great new salad!
