You may remember that I have in the past tried to create Irish brown bread with little success. With the high holiday on the horizon in 10 days, I needed to get going on testing again, so the Hubs will be eating a lot of brown bread in the next couple of weeks.
It’s a little like the story of Goldilocks, in that the perfect product remains elusive. Eventually there will be a “just right” but this isn’t it. Not wheaty enough, a little too sweet and too moist, the recipe called for wheat flour, AP flour, Irish oats, brown sugar, salt, and buttermilk. Baking soda makes it rise. I also felt like it was not salty enough believe it or not. In the process of gathering ingredients this morning, I came to realize my baking cart is out of control.
