Honestly, I think the Hubs’ favorite food is potato salad. He loves it, and as the forecast for this weekend looked warm, and we took the tarps off the patio, and we were going to grill some steaks to celebrate the return of spring, I decided to make the first batch of the season.
I use baby red bliss or creamer potatoes, hard boiled eggs, spring onions or red onions, mayo, Dijon mustard, dried dill, celery salt, ground red pepper flakes for heat, salt and fresh ground pepper. I have been known to add bacon or jalapeños when available, but not this batch. Just mix it all up till it tastes good to you!
