The end of the boiled potatoes from last nite’s salmon supper?

I had leftover potatoes from supper last nite and was going to make home fries to go with scrambled eggs, and then paused to say hmmmmm, I think I’ll make frittata! Browned a 1/2 of an onion, added the potatoes and cooked till the potatoes were starting to get crispy.
Then I added the end of a bag of spinach…
Then I added 4 eggs with a 1/2 cup of heavy cream and crumbled a 1/4 cup of feta cheese on top.
Into a 425 degree oven for 10 minutes and 5 minutes under the broiler! It gets all puffy and melty. Actually Puffy and Melty were two of the dwarfs that didn’t get as much air play from Snow White…enjoy!
