My EZPOT week…

I had a really busy week…snow, snow, cold, too many meetings, conference calls and all the while doing my best impression of a fire extinguisher…you know putting out fires.
So I was extra surprised when I got home tonite, hit the treadmill and then had all kinds of energy leftover. The Hubs was at rehearsal, so no need to be committed to dinner ( I had coffee ice cream and wine), so I decided to do a little cooking.

So EZPOT is the acronym for the ingredients in ratatouille; eggplant, zucchini, peppers, onions and tomatoes. I thought first of doing a deconstructed ratatouille but I think I can use everything for the start of 4 or 5 different items. I roasted everything in a 400 oven with olive oil, salt and pepper. I can make eggplant caviar or baba ganoush with the eggplant, cheddar pepper scones or poblano oil or roast jalapeño relish with the peppers. The roasted tomatoes will go in this great soup and onions can go in bacon jam or a frittata and more. I figure I have a jump on my weekend meals! Can you tell I might finally be over my flu?
