Just another Meatless Monday …

But one that meets the February color challenge! As you know, my color for the month of February is red ( of course) and I think it will be a little easier than white.

We start this easy meatless dish with some red Swiss chard, rinsed well and rough chopped. It goes into a large sauté pan with garlic, olive oil, salt and pepper. Cook it until soft.

Meanwhile back in the oven, roast sweet potatoes whole in a 400 degree oven for about 45 minutes.

Dice up some Feta and some fresh dill.

When everything is ready, top the potatoes with the sautéed chard, then the Feta, and finally the dill. It shouldn’t work, but trust me it does! You can put the dill in a bowl for everyone to serve themselves, because some may want more than others!
