It’s stone fruit season, so I made a batch of apricot macarons over the weekend. I have three fruit flavors that I favor and apricot is one of the three that join lemon and fig as a favorite. Anyway, I bought some apricot extract last month and got to try it out on this batch.
I added the extract to my standard buttercream and instead of putting apricot jam in the middle of piped buttercream, I added the jam to the buttercream. It definitely thinned out the buttercream and it was easy to pipe this way. Here’s the finished macaron for this month!
