I was putting groceries away today and found a lonely bunch of asparagus that was kinda on the edge of being useful, and the end of a tub of ricotta cheese. We have been using lemon scented ricotta for a lot of recipes at work lately, so with that in mind I whipped up a little tart. I always have puff pastry dough made, so I rolled some out and baked it part way. While it was baking, I dry grilled the asparagus a a couple of small sweet peppers.

Then I mixed the ricotta with an egg, fresh ground black pepper, grated Parmesan cheese, and a ton of lemon zest. Spread the mixture on the shell and top with the grilled vegetables. I added a little olive oil and baked in a 395 oven for about 15 minutes, just till the cheese mixture bakes and sets up.

Start to finish 45 minutes! Enjoy!
